Unlike natural or washed coffee, honey processing involves de-pulping the cherries after sorting, and drying without washing the sticky, honey-like mucilage from the beans. This not only adds a unique complexity to the overall profile, but can also be beneficial when harvesting and processing in regions where water is sometimes scarce.
